Shoe Leather

Happy President's Day. Having the holiday off, I volunteered to make dinner for a nice lady who just had her knee replaced. I always make chicken pot-pie, it's easy, and I can't really make anything else. This time, I decided to mix it up, try something new. Pot Roast. I called my mom, looked in a cook-book, and checked on-line.

Feeling confindent, I purchased the very first chuck-roast of my life, browned it and had it in the oven by 1PM, projected finish time, 3PM. I added vegetables at 2PM, checked on it at 2:30PM and started to worry just a bit. Not boiling, not even generating steam, roast hard as a rock. Called my mother.

It is now 4PM, just transferred everything to a pot on the stove. The roast is akin to the above mentioned footwear. It so happens this nice lady has a sister who lives with her. She has Down Syndrome and no teeth. Tenderizing mallet instead of utensils? Might be prudent. Olive Garden, anyone?

  1. was it covered in the oven? was the oven hot? Pot roast has become one of my go-to meals, but only in the oven. can't do it in a crock pot.
    try baked ziti for the next meal. easy to make, sure to please.

  2. Maria, that is funny, I was just going to comment that I cannot do roasts in the oven. Crock pot only.

    Everyone loves Olive Garden, good choice. :)

  3. Yeah, I am scared of meats... all I can cook is chicken, flank steak, and salmon. All those different cuts of beef and pork scare me, I have no clue what to do. Even when I follow my mom's directions it never turns out the same? I feel your pain.

  5. I do not think that is suitable for cooking pot roast in the oven. I use a heavy pot with a heavy lid - maybe it heats up and in turn heats the meat inside. Don't need to buy expensive Le Creuset stuff; we have a cheap(er) Martha Stewart enameled cast iron pan that works perfectly. It's super heavy but cleans up surprisingly easily, and works just right for pot roast, risotto, or anything that needs a heavy bottom pan for even heating.

  6. Yes, that was Mama's opinion as well. They should put a note to that effect on the foil pan for those of us who rarely cook.
